Sneaky Green Sandwich

You will need:

2 tubs of hommus, going for one with decent ingredients (if you live close to Kombu and depending on size of family you have choice of the Hafla dip in large or small) Garlic - Italian or Russian (Italian has greater medicinal properties) Miso - BLUE MOUNTAINS brand, the unpasturized variety in the fridge Juice of fresh lemon or fresh orange Greens - what ever leafy greens you have to hand, the darker the better (check for bitterness - the subtler the better for children) Cucumber - children are often happy to eat the skins of the small soft skinned Lebanese cucumbers, however if you are using the larger, thicker skinned variety, you could either fully peel or partially peel (so you have stripes like in the sandwich photo).

Bread -  I have used a sourdough organic rice loaf, again, Bellingen-made by Penny Burrows and available at Natural Produce Market (Showground 2nd and 4th Sat) LUNCHBOTS lunchbox - available in store in variety of colors and sizes.

Quick and Easy method:

Place one heaped teaspoon of raw miso (added here with the theory that this fermented food will assist digestion and absorption of the protein in the chickpeas and the nutrients in the greens) to a small mixing bowl and add lemon juice (to taste - your family might like as little as 1teaspoon or as much as the juice of one whole lemon). ((As an alternative, a little orange juice squeezed from the fruit can make this a slightly sweeter spread.)) Stir these together until well blended.

Now add the crushed garlic (again to taste - you know your children’s garlic limits). Even though hommus already has garlic in its ingredients, I add more (preferably locally grown and chemical free) because this magical medicine food is fantastic at keeping our childrens immune systems strong, keeping colds, flus (and threadworm!) at bay. Now scoop contents of both packs of hommus into bowl (but don’t throw plastic tub into recycling just yet!) and stir well.

Finally sprinkle in your very finely chopped greens and blend through with spoon. Now you can spread this onto your children’s sandwich bread and the leftovers can be returned to the fridge in the original hommus container to be used again in the next 2-3 days. Enjoy :)
